It's not Arabian, it's Levantine (Syria, Lebanon, Palestine) and last I checked, the Levant is Mediterranean. Oh and btw, this dish is also prepared in Turkey and Greece. If we want to be exact, this dish is Eastern-Mediterranean. Eastern-Mediterranean countries all have similar dishes. You said that if the eggplant didn't bounce back when you pressed on it that it was over ripe and you should leave it on? the vine..did you mean under ripe? Other wise that statement doesn't make sense. Also, does the eggplant lose it's bitter flavor when it is roasted? I was always told to put salt on it to get rid of the bitter taste. Thanks.
