The problem is countries that let farmers do whatever they want and distroying land. If countries had stronger laws on what farmers could do and how they are allowed to do them then mass cattle farms would not exist and the world would be cleaner for it. I understand now the point you were getting at though, thanks for the conversation. :-)

This dish is prepared by countries where eggplant is growing.I do it simpler, Eggplant+Tahini+Garlic+Salt.Still great result. P.S? The way you cut the eggplant is not safe, you can slash your wrist.Direction of cut must be from you and not towards you.Or use a hard surface.

You said that if the eggplant didn't bounce back when you? pressed on it that it was over ripe and you should leave it on the vine..did you mean under ripe? Other wise that statement doesn't make sense. Also, does the eggplant lose it's bitter flavor when it is roasted? I was always told to put salt on it to get rid of the bitter taste. Thanks.
